Food For Thought

Since this past Monday, I've been watching my carbs...and trying to do without. 
 My shorts and capris are snug.....it's okay, it's my own fault.  I think I don't have to watch what I eat or exercise regularly.  I want to be healthy and feel good in my clothes...but, when it comes down to it,
I lack the discipline to do so.   It's such a daily battle for me...and frankly I get tired of hearing myself complain about it.   Oh how I would like to lose 20 lbs once and for all and never talk
about this again.   It's a choice, and I need to start making better ones. 


I thought I would share a few easy recipes that I have tried recently.





 The recipe calls for scallions....but I didn't have any on hand.  I've had it both ways...and I would go with the scallions if you're going to try it!







These are fresh baked green beans.  I had never baked green beans before...unless you count them in a casserole!  My friend Angie's husband said this is how he likes to cook them.  I mixed them with a little olive oil and salt and put them on a cookie sheet.  I baked them at 350 for about 25 minutes.  They were delicious!  They almost didn't even taste like green beans!






This is my favorite summer salsa.  Black beans, corn (from the cob!), tomatoes, red onion, lime juice, olive oil and cilantro.  It's so fresh.  I just need to come up with something other than tortilla chips to put it on!







I got this recipe from Nicolle.  Jalapenos stuffed with cream cheese and chives, wrapped in bacon and then grilled.  If you want to see a more appetizing picture...you'll have to check out Nicolle's picture!

Raspberries with a chocolate chip.  What a treat.  Of course, I put these together
last week...cause remember, I'm watching my carbs this week!

Oh my goodness, you are funny! And sweet to mention me here. :) I don't even see myself as good with cooking or doing stuff in the kitchen, but I do love finding and trying new foods!

I think the raspberries are still fine when you are watching your carbs, the amount of chocolate you eat is so minimal with them.

I am going to try to bake green beans too. They look good. I love the look of your salsa, and your bean salad too. I think your salsa would be good on top of a grilled chicken breast!

Except for my weekly cupcake/mexican fix, I've dropped 25 lbs in 3 months. I still have a lot to go, but it's been pretty easy. There are so many great foods to eat, that don't involve processed stuff! I never feel hungry.

Hi Kerrie,
That all looks so goooood! Especially the raspberries with chocolate!! It does get harder the older we get. I was a teeny tiny thing in my teens and twenties. Then hit 40 and watch out. It has been a battle since!!

Yes, Nicolle is awesome as is everything she cooks! I love black bean salsa too, but I cannot find black beans here. :( When I make it at home, I put it on top of my grilled chicken or on a salad with a little balsamic. Yum!

Your food pics look amazing and yummy!! I am feeling the need to workout more and eat better too...you would think without a computer, i would have tons of time right??:)
Hope you have a wonderful 4th. We are heading to my parents in GA tomorrow for a week!

That salsa made my mouth water. I agree, complaining about needing to lose weight is so much easier than actually doing it. *sigh* You can do it, you seem like a phenomenal cook and you're right, it just takes a little more focus. In the meantime, enjoy your fourth!

Kerri I just LOVE your new header!! It looks so fun and cheery. Love the colors!

Great looking new recipes you've made. That white bean salad looks so good. I've made a similar corn salsa (from PW) and it was really good over grilled chicken! Even put the corn salsa and chicken over a bunch of romaine!
The rasberries look tasty. Nicolle does share some good looking recipes doesn't she?

Good luck with your 20 pounds!! You can do it!

I wish once you lost the 20 lbs it just stayed off, forever. If you wanted it back you could pick it up at Walmart or something... Good luck. I've been working on lowering my carbs too. It's harder than I thought.

I love that salsa recipie. I think I'm going to try it. Happy 4th.

Those jalapenos are my favorite snack ever, my dad and I can put down 20 easily!!!

I tried the raspberries from Nicolle too... mine were not healthy, because I would chase each one with about 5 more chips!!
They were good nonetheless!!! :)
