My Favorite Birthday Cake





2 cups sugar
2 cups flour
1 can (20oz) crushed pineapple
2 eggs
1 tsp. baking soda
1 tsp. vanilla

Mix ingredients by hand and pour into 9 x 13 pan.
Bake at 350 degrees for 30-40 minutes.


Frosting
1 pkg. cream cheese
(do not use fat free cream cheese..your frosting will be very lumpy!)
1 stick butter
1 1/2 cups powdered sugar
1 tsp. vanilla




On my birthday I would always pick this cake for my mom to make.
I think I was in elementary school when she got the recipe from a friend.
It is especially good after it has been in the fridge for a couple of hours!

Eric and Brady made me this cake for my birthday yesterday.
Usually they make me a chocolate cake with chocolate icing (because that's
what Brady likes).  But, Brady overheard me telling a friend
 on the phone about the pineapple cake....
and he asked if they could kick my birthday up a notch this year!
The cake was awesome.
I love those two guys so much!

OMG Kerri! That is my absolute favorite cake too!!! I could eat the whole thing in one sitting. I know I've eaten half before and shocked my husband :) I got the recipe from my mother in law years ago. It's soooo moist and delicious. I'm craving it now!

I love my cakes right out of the fridge too.
In fact, that is where Nicolle's lemon cookies are right now. Goodness it is soooo hard to be good. Anyway...I think Dave would really love this cake, he loves pineapple upside down cake.

looks so yummy. my grandmother makes a cake that is called coco lopez cake but it has pinapple and i think coconut milk in it it is so yummy and way better after the fridge for a day. i'm going to try tyour recipe tonight i think!

This *might* be tomorrow's dessert! (I think I have all of the ingrediants!) Days trapped in the house= lots and lots of calories!

Thanks for your sweet comments. I never know where to answer questions. Anyway, I don't use Photoshop. I have PS Elements but I can't figure it out! Drives me nuts! I need to learn it. I edited those 2 photos in Lightroom. BSD gave it to me for Xmas. MUCH easier to use, but I still only know how to use 1/10th of it.

Oh, and my hair is actually darker. lol! I have curly/wavy hair similar to the Big Ballerina's but I always straighten it b/c it gets really bushy/frizzy. I finally found a shampoo and product that let me bring out some of the natural curl w/out the frizz. I'm really excited about it so thanks for noticing. :)

Wow! My sister makes the exact same cake! She puts chopped up pecans on top of the frosting. It is so moist and delicious. I would add a little coconut to the inside too. MMMM!

i know this post is sooo old but i just wanted to mention that this cake has become a favorite over at my house. It's so yummy. My husband wont try it cause he doesn't like pineapple but everyone else goes nuts over it. thanks for sharing .
