Pumpkin and Pizza


My book came in the mail yesterday!  I stayed up pretty late reading it....and so far, so good.  I will definitely post my thoughts once I'm finished with it.  I'm not the fastest reader...so, it may take a few days.  When Brady brought in the mail yesterday, he said, "What's this?"  I said, "it's a book on how to get your kids to listen!"  He seemed appalled that I would buy such a book!



Look what I found yesterday at Walmart.....



I probably should have bought more...but geeez!  They were almost $2.00 a can.  Last night I made pumpkin muffins and this morning I enjoyed one after my pumpkin smoothie.  Life is good.





The card behind my muffin is for my mom.  I feel bad that I haven't done a very good job lately of putting little notes in the mail.  Yesterday at Walmart I had a fall picture of Brady printed to suprise her with.  Since all of my pictures are stored on the computer it seems I never get prints anymore.  I think the print was 40 cents...but it will make her day...I guarantee it.


My friend Toni shared a pizza recipe with me that she tried last week.  So of course, I needed to try it too.   I made them for dinner last night...and they are definitely worth sharing! 




Ingredients

Pizza dough
pesto
mozarella cheese
parmesan cheese
tomatoes


These were so good!  I bought the Walmart brand pizza dough found where the tubes of cookies are biscuits are.  I think they would make easy little appetizers too.

Hope the book sheds some new light for you. I am hoarding pumpkin too! I buy it whenever I see it.
I love to use Pesto as a sauce for pizza. Try using pesto, and figs, and goat cheese, then after the pizza cooks, top it with fresh arugula and a drizzle of olive oil. SOOO good!!! I love it just fresh tomatoes too. But I have not done them small like this before. Great idea!!!
Mom will love the photo. Do you live far from your mother?

can't wait to hear about the book, kerri ... and both of your recipes look deeelish!! i never go wrong with your recipes, so i'd better add the pesto and pizza dough to my grocery list ;-)

I love pesto on my pizza, yummers. I want to lick the screen, that muffin looks heavenly. I wanted to tell you that I found the parachute guys at my grocery store, if they have any more, I will get them and mail them to you. They were only like a buck so no biggie. It was in the cereal aisle, so I don't know if they'll have any more.

I never print out pictures anymore either, but a good reminder to do so more often! Those pizzas look yummy!

I can't wait to hear your thoughts on the book. I have a couple of boys who have not been the best listeners lately, and it's very frustrating.

I will have to try your pizza recipe...looks delish. And now I want a pumpkin muffin! Have a great weekend.

I heard there was a shortage of pumpkin.... but I saw a shelf full at our WM.
I NEED to make those muffins. And the pizza!

Too funny Kerri. I went Wal Mart yesterday and bought about 10 cans of pumpkin too.
Apparently, and this may just be a rumor, Hurrican Irene did a wipe out job on pumpkin fields and now canned pumpkin is scarce and expensive.
I wanted to bake some pumpkin bars the other day and couldn't find canned pumpkin anywhere. A friend told me to try Wal Mart and there it was. There wasn't a lot of it, but I think we might still be early in the year for this type of product anyway. It will be interesting to see about mid October and November if the rumors are true, or if I bought way more canned pumpkin that I will ever need.
The mini pizzas are just my kind of thing.
I'll swap you a great recipe for pumpkin bars with cream cheese frosting for your pumpkin muffin recipe.

The pizza looks good, but I'm in the minority....I do not like pesto. :( I did make pita bread pizza today for lunch though! Your muffin looks good. I'm glad you found some pumpkin. I stocked up as well. I am glad you wrote that about a card and photo for your mom. I know my mom and grandma would be thrilled if I did this. I used to be the one who sent way too many cards and pictures, but I've slacked lately. Thanks for the inspiration! I bet your mom will be so happy. :)

ps. I heard the same thing about hurricane Irene messing with the pumpkin supply, as well as the horrible heat wave this summer. I had to go to 3 walmarts and a Target before I found any......
