Cookies and BLT's



I hope everyone is enjoying their long holiday weekend!  We have been sitting in front of the t.v. too much watching the U.S. Open.  Brady was really excited Friday night to watch Jack Sock play.  Sock just turned pro this summer after graduating from high school.  Brady met him last summer at the U.S. Open Kids Day and got to hit with him for a bit.   Brady totally pictures himself playing at the Open someday too.  I want him to believe in himself...but I also wonder about the day when he realizes not everything we believe will actually happen.  For now, I'll keep his dream alive!

Not too much else going on around here.  We were over at Grandma and Grandpa's house for lunch today and my sister in law informed me that I am well behind my number of blog posts this year compared to last year at this time.  I guess I don't have anything too interesting to blog about these days!  I will try to do better Donna!



I did make these cute little blt's to take to my in-laws for lunch today.  I used chipotle mayo to give it a little different taste.  I found the idea HERE.  Eric made the bacon for me....he is always so helpful like that.




I tried another new recipe this week for chocolate chip cookies.  I've never been very good at making my husband and son's favorite kind of cookie...and it's not because I haven't tried!  My cookies usually turn out hard as a rock...unless eaten within a few minutes of removing them from the oven.  But finally, I found THIS recipe and the cookies turned out soft and chewy...just the way we like 'em!  This will definitely be my go to recipe from now on.

How funny that your SIL is keeping track of your posts :-D

I too, have been trying different chocolate chip cookie recipes for the past year. Now I have one that is soft and chewy, one that is thick and like shortbread and one that is more firm (kinda like the Chips Ahoy brand from the store).

It's amazing how many different recipes are out there!

I have 100% faith that Brady will make it there also... and then all of his blogger fans will show up to watch him tear up the court and claim to have "known" him since he was a little guy [via blogger of course]! His tennis talent AMAZES me, and with the dedication that he has-- how can you not believe him!!

ON another note... I LOVE bacon. I could almost lick the screen to get a bite out of one of those sandwiches!

I love me a good BLT, but I HATE HATE HATE (Triple HATE)cooking bacon. I hate the smell it leaves through the house, I hate the grease it leaves on the stove top or oven (depends on how you cook it) and I hate the leftover grease, so you can guess how excited I was to find precooked bacon at Costco. Oh happy day.
I can't believe the Brady Man got to play with Jack Sock, lucky guy.
Let him dream, always.

Probably shouldn't say this, but Jack Sock is cute!! I will have to follow him during the Open...and I am for sure trying the soft and chewy recipe :)

Now that is romantic - a hubby that makes bacon for you! Why is bacon such a beat down? I was watching the US Open and thought about Brady! Okay, now I am off to go look up that cookie recipe!

The BLTs look so good. I could eat those every single day. The cookies look great. I have been seeing a recipe floating around that uses a packet of vanilla pudding mix. I thought that might be these, but then I saw the recipe. They look so good tho!

Those sandwiches are just what I am looking for for a book club I am going to this week.
And how exciting for him to have got to play with that guy.
Both Hubs and I got sick this weekend. So much fun.
