Watcha Cookin'?






Some of you asked what I had in my bowl on Sunday!


It's roasted potatoes and veggies.

Someone within my circle of blog friends posted
the recipe on their blog...so whoever it is, please let me know
because you definately deserve the credit!  This recipe is a
KEEPER for sure!!  I will probably make it again before
the week is over!

I should have known she was the one who posted this healthy recipe!
She's been on a roll lately with eating healthy and working out big time!
Cathy lives about 10 minutes from my family in Ohio, where I grew up.
It really is a small world out there!  


Ingredients
3 yellow potatoes
2 sweet potatoes (or butternut squash)
red onion
yellow and red bell pepper
thyme & rosemary
1/4 cup olive oil
1/3 cup lite balsamic vinegar dressing
salt and pepper

Mix everything together and bake at 475 degrees.
Bake for 35-40 minutes.


The recipe called for butternut squash...but I added sweet potatoes instead.




Along with this dish, Eric cooked steaks on the grill.  We don't have steak too often here.  It's usually something we have once in awhile on the grill in the summer.
Brady wanted to know if we could have steak every couple of days.
I explained to him that steak cost more money and so we would only be having it once in awhile.  I told him I would try and buy it a little more often if it's on sale.
Later, Brady brought me his wallet of savings ($95.00) and wanted to know if he could buy us more steaks!  Poor guy!

Oh what a sweet boy he is. My kids love steak too. Me, not so much. I haven't had it in so many years, I don't know where they get it! Those veggies sound delish. I have been roasting lots of different veggies lately and trying different spices. Rosemary is my favorite as of late. Not sure why.

About your question on my post today: almost everyone who comes through our house tells us they love it but have to sell their house first. We are priced higher than the first time homebuyers so people need the equity in their home to buy ours (instead of a first timer who might have a nest egg saved.) And yes, people are having trouble getting loans and there are so many houses available, people are getting really picky. They will say the goofiest things and nit pick like crazy. Oh well, hopefully it will be over soon.

And to answer your other question: I had a "wish list" on Amazon. I kept adding things on there as I thought of them. Kind of like going to the mall without leaving the house. I also had a gift card to use so that is why I wanted to place an order. They are really nice about returns and ordering is super easy, their prices aren't rock bottom or anything. I like them for the pure easiness. :)

I feel your pain! Max wants us to fix steak every single weekend. Luckily, we have friend that is a butcher and let's us have them at his cost. Last summer we had friends over and they brought lobster to go wit the steaks. He hasn't stopped asking for lobster since! Since they cost a ton and I don't know how to fix lobster.....he hasn't had it since. At least he has great taste for a seven year old!
