S'more Cookies

*We're leaving today for the beach.  I thought I would re-post some old blog entries while we're away on vacation!  I'll catch up with all of you next week!

I made these cookies yesterday afternoon for my two favorite guys (and grandpa, brother-in-law and nephew)  who are leaving today for a camping weekend.  I got the recipe from a Taste of Home cookbook.  It's the first time I made them and I think they turned out pretty well...I had two of them!



S'more Sandwich Cookies

3/4 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1-1/4 cups flour
1-1/4 cups graham cracker crumbs
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon cinnamon
2 cups (12oz) semisweet chocolate chips
24 to 28 large marshmallows

In large bowl, cream butter and sugars.  Beat in egg, milk & vanilla.  Combine flour, graham cracker crumbs, baking soda, salt and cinnamon; gradually add to creamed mixture.  Stir in chocolate chips.

Drop by tablespoonfuls 2 inches apart onto ungreased baking sheets. ( I used parchment paper)  Bake at 375 degrees for 8-10 minutes.  Remove to wire racks to cool completely.

Place four cookies bottom side up on a microwave safe plate; top each with a marshmallow.  Microwave uncovered for 10-15 seconds or until marshmallows begin to puff.  Top each with another cookie.  Repeat.

Makes about 2 dozen



And just for fun...I hid this little guy underneath the cookies in the basket!

Those look fabulous, and I LOVE the fact that you hid the frog underneath. That made me laugh.

ps. Thanks for the compliments on my pictures. I have a Canon Digital Rebel XSi. I use several different lenses though, so I think that makes all the difference.

Yummo! They sound/look so good. I am cracking up that you put that frog in there. I do that to my husband all the time in his lunch box. Funny!

Sounds like a lot of work...but really yummy. I want that little froggy guy! And the note and the bobber are cute too! Do guys even appreciate stuff like that?

Hi again, yes, lots of places offer photography classes. Check out a local junior college, a camera store, or if you can just find a professional photographer in your area...a lot of times they will give lessons. :)

oh man...kind of like a cross b/t a chocolate chip cookie and a whoopie pie. I think my ballerinas would be all over these. Definitely going to try these! :)
