I was flipping through a Woman's Day magazine at the doctor's office a couple days ago and came across this recipe. I wanted to take a picture of the page so I would have the recipe, but the doctor came in and I put the magazine down. I improvised on the amounts of indredients and it was so yummy.
BLT Salad
rigatoni pasta
red onion
olive oil
cherry tomatoes
bacon
arugala
salt & pepper
(parmesan cheese)
Make the pasta and set aside. Cook bacon and then add red onion to the same pan. Once the bacon and red onion are cooked, add the cherry tomatoes, arugala & a few tablespoons of olive oil. Stir until heated through...maybe 5 minutes. Add to your drained pasta and heat for another 5 minutes. We topped our dish with grated parmesan cheese.
So fresh and summery!
I'm looking forward to the leftovers later today!
*Ps. I was at the doctor because I have poison ivy on my cheek and near my eye. It's lovely. :)

Oh No! Poison Ivy? Not good. You must have that near your house or I bet it's on the bike trail where Brady likes you to take him to.
So did you end up putting the vinegar on the rash? I might just skip that one, not sure it'll help in this case.
The pasta looks delish, I'm trying it. I totally feel like eating some kind of salad every day. I'm too worn out to cook anyhting and it's too hot to really heat the house up with ovens, etc...
Hope the rash goes away soon.
I'll bet you're cute!! Hope the Poison Ivy goes away soon. I am copying and pasting that recipe. Sounds delicious. THanks!
I don't react to poison ivy very much...usually just a few spots then it's gone. I hope yours is too! It's scary when it's near the eye. The pasta dish looks wonderful..thanks for sharing. Also, bacon can make anything ten times better!
What a perfect summer salad! Hope you feel better from your run in with the poison ivy soon. That can be miserable!!!!!
XO Kris
First...major bummer on the poison ivy :(. Hope you are free of it soon! Meanwhile...what a great go to summer salad. I pinned it and will definitely be trying it, thanks Kerri!
Sorry about your poison ivy! :( I've never had it, but I remember my dad always coming back from hunting, or their land, and always having it. No fun!
You know I am going to make this dish. Kevin can't have pasta often, so I will have to do it for a special occasion. I know we would both love it. It looks fabulous!
xo.
Bacon and pasta - yum. Hope the doc is keeping that poison ivy in check. No fun.
Definitely trying this! Thank you for sharing the recipe. Yum!
